The main stages of the production of wine Beaujolais Nouveau / Beaujolais Nouveau
1) After harvesting the grapes, as soon as possible, whole bunches are placed in a stainless steel vat. The grapes are not washed. (1)
2) Under its own weight, the grapes that are on the bottom are choked. Over the next three to four days, the resulting juice (10-30% of the total volume) begins to ferment. Sugar, contained in the juice, turns into alcohol and carbon dioxide during fermentation.
3) When the fermentation process (fermentation) is completed, the remaining grape mass undergoes pressure in the press. (2)
4) The juice extracted by the natural way and obtained under pressure is filled with another vat (3), where during the next six weeks a secondary fermentation process takes place. The fermented juice turns into wine, it is bottled. (4)
